Well, I had to clean the frig out and was jones’n for some soup. Having a Leek and Sweet Potatoes from our winter CSA, here is what I came up with. Amazing taste.


  • 1 onion, chopped
  • 1-2 tbsp of ginger diced
  • 2 or 3 large leeks (remove green parts)
  • 2 ribs of celery diced
  • 2 tsp ground cumin
  • 1-2 tbsp coconut oil
  • 4 cups veggie stock
  • 4 sweet potatoes chopped
  • 1 15 oz can coconut milk
  • 1 bay leaf
  • Sea salt and freshly ground black pepper to taste


In a large stock pot, saute the onions in oil for 2 minutes. Add in leeks, ginger, celery. Saute until soft. Then add the coconut milk, veggie stock and stir. I tend to use homemade veggie stock with very little salt. If your using store bought stock, you might have enough salt to taste already. Add in remaining spices and potatoes. I tend to leave skins on potatoes to get more nutrients. Simmer on low for approx. 1 hour. Remove bay leaf. Puree using a wand-blender. Adjust spices to taste.
